Peaches and Cream Pancakes


INGREDIENTS

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 2 teaspoons sugar

  • ½ teaspoon cinnamon

  • 2 eggs

  • 2 cups Mariani Original Walnutmilk

  • 2 tablespoons vegetable oil

  • ½ cup whipped cream

  • 3 medium peaches, diced


INSTRUCTIONS

  1. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar.

  2. In a separate bowl whisk together the eggs, walnutmilk, and oil.

  3. Add the wet ingredients to the dry ingredients and whisk together until combined.

  4. Bring a greased skillet to medium heat.  Add a ¼ teaspoon of pancake batter.  Cook for 2-3 minutes on each side, until golden brown.  Repeat until you have used up all of the batter.

  5. Top the pancakes with whipped cream and peaches, serve, and enjoy!
