Juicy summer fruit and preserves make this cobbler tasty and fast to prepare. Serve with Walnutmilk vanilla ice cream for an extra creamy dessert.

INGREDIENTS

Filling:

  • 1 cup peach or apricot preserves 

  • 2 tablespoons cornstarch

  • 2 tablespoons lemon juice

  • 7 cups sliced fresh peaches, plums and apricots

Topping:

  • 1 cup flour 

  • 3 tablespoons sugar

  • 1 1/2 teaspoons baking powder 

  • 1/4 teaspoon salt

  • 1/4 butter, softened

  • 2/3 cup Mariani Vanilla Walnutmilk

  1. Preheat oven to 350°F and lightly butter an 11x7 or 9-inch square baking dish.

  2. Stir together preserves, cornstarch and lemon juice in a large bowl. Stir in fruit, and then spread into prepared pan. 

  3. Stir together flour, sugar, baking powder and salt in a medium bowl. Stir in butter, and then stir in Walnutmilk.

  4. Drop spoonfuls over fruit and bake for 45 minutes or until topping is lightly browned and cooked through underneath.
