Stone Fruit Cobbler

Juicy summer fruit and preserves make this cobbler tasty and fast to prepare. Serve with Walnutmilk vanilla ice cream for an extra creamy dessert.

INGREDIENTS
Filling:
1 cup peach or apricot preserves
2 tablespoons cornstarch
2 tablespoons lemon juice
7 cups sliced fresh peaches, plums and apricots
Topping:
1 cup flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 butter, softened
2/3 cup Mariani Vanilla Walnutmilk
INSTRUCTIONS
Preheat oven to 350°F and lightly butter an 11x7 or 9-inch square baking dish.
Stir together preserves, cornstarch and lemon juice in a large bowl. Stir in fruit, and then spread into prepared pan.
Stir together flour, sugar, baking powder and salt in a medium bowl. Stir in butter, and then stir in Walnutmilk.
Drop spoonfuls over fruit and bake for 45 minutes or until topping is lightly browned and cooked through underneath.
