Vegan Butternut Squash Mac & Cheese
INGREDIENTS
1 lb. macaroni or shell pasta
1 medium-size butternut squash, peeled and diced
2 tablespoons olive oil
3 cloves garlic minced
1 cup vegetable broth
2 cups Mariani Unsweetened Walnutmilk
⅓ cup nutritional yeast
Salt and pepper, to taste
Optional: red pepper flakes and fresh herbs, for garnish
INSTRUCTIONS
Cook the pasta according to the instructions on the package.
Add the olive oil and garlic to a large pot over medium heat. Sauté for 2-3 minutes.
Add the butternut squash, vegetable broth, and walnutmilk to the pot and bring to a simmer. Simmer for 10-15 minutes, until the butternut squash is soft and can be easily poked through with a fork. Stir in the salt, pepper, and nutritional yeast.
Place the butternut squash mixture in a high-speed blender or food processor and blend until completely smooth.
Mix the butternut squash sauce with the pasta, serve, and enjoy.
