Vegan Butternut Squash Mac & Cheese


INGREDIENTS

  • 1 lb. macaroni or shell pasta

  • 1 medium-size butternut squash, peeled and diced

  • 2 tablespoons olive oil

  • 3 cloves garlic minced

  • 1 cup vegetable broth

  • 2 cups Mariani Unsweetened Walnutmilk

  • ⅓ cup nutritional yeast

  • Salt and pepper, to taste

  • Optional: red pepper flakes and fresh herbs, for garnish


INSTRUCTIONS

  1. Cook the pasta according to the instructions on the package.

  2. Add the olive oil and garlic to a large pot over medium heat. Sauté for 2-3 minutes.

  3. Add the butternut squash, vegetable broth, and walnutmilk to the pot and bring to a simmer. Simmer for 10-15 minutes, until the butternut squash is soft and can be easily poked through with a fork. Stir in the salt, pepper, and nutritional yeast.

  4. Place the butternut squash mixture in a high-speed blender or food processor and blend until completely smooth.

  5. Mix the butternut squash sauce with the pasta, serve, and enjoy.
