Sweet Potatoes with Marshmallows
INGREDIENTS
2 large sweet potatoes or 4 small sweet potatoes, peeled and diced
½ cup brown sugar
¼ cup (½ a stick) unsalted butter, melted
½ cup Mariani Vanilla Walnutmilk
½ teaspoon cinnamon
Salt and pepper, to taste
8 oz. mini marshmallows
½ cup walnuts or pecans
INSTRUCTIONS
Preheat the oven to 350 degrees. Grease a 9-inch baking dish.
Bring a large pot of water to a boil. Add the diced sweet potatoes and boil for 20 minutes, until the potatoes are soft enough to poke through with a fork.
Add the boiled sweet potatoes to a large mixing bowl and mash with a potato masher or a fork. Add the brown sugar, walnutmilk, and butter to the mashed sweet potatoes and stir until ingredients are evenly combined.
Transfer the sweet potato mixture to the prepared baking dish. Top with marshmallows and nuts. Bake for 20-25 minutes, until the marshmallows are golden-brown.
