Dairy-free chocolate Peppermint Pudding
INGREDIENTS
2 ½ cups Mariani Original Walnutmilk, divided
¼ cup cocoa powder
⅓ cup maple syrup
2 tablespoons cornstarch
1 teaspoon peppermint extract
4 oz. semi-sweet chocolate, chopped
¼ teaspoon salt
Optional: peppermints, whipped cream, and cocoa powder, for garnish
INSTRUCTIONS
In a small bowl, whisk the cornstarch with ½ cup of walnutmilk until the starch is dissolved and no chunks are visible.
Add the remaining 2 cups of walnutmilk to a saucepan and bring to a light simmer. Add the cocoa powder and mix until dissolved. Stir in the maple syrup and peppermint extract.
Pour the walnutmilk & cornstarch mixture into the saucepan and stir until combined. Let the mixture simmer for 2-3 minutes. Stir in the chopped chocolate and continue to simmer for 1 minute.
Transfer the pudding to small serving cups or bowls. Let it chill in the fridge for at least 1 hour up to 48 hours before serving.
