Dairy-free chocolate Peppermint Pudding


INGREDIENTS

  • 2 ½ cups Mariani Original Walnutmilk, divided

  • ¼ cup cocoa powder

  • ⅓ cup maple syrup

  • 2 tablespoons cornstarch

  • 1 teaspoon peppermint extract

  • 4 oz. semi-sweet chocolate, chopped

  • ¼ teaspoon salt

  • Optional: peppermints, whipped cream, and cocoa powder, for garnish


INSTRUCTIONS

  1. In a small bowl, whisk the cornstarch with ½ cup of walnutmilk until the starch is dissolved and no chunks are visible.

  2. Add the remaining 2 cups of walnutmilk to a saucepan and bring to a light simmer. Add the cocoa powder and mix until dissolved. Stir in the maple syrup and peppermint extract.

  3. Pour the walnutmilk & cornstarch mixture into the saucepan and stir until combined. Let the mixture simmer for 2-3 minutes. Stir in the chopped chocolate and continue to simmer for 1 minute.

  4. Transfer the pudding to small serving cups or bowls. Let it chill in the fridge for at least 1 hour up to 48 hours before serving.
