Chocolate Pudding
INGREDIENTS
2 + ½ cups Mariani Vanilla Walnutmilk, divided
¼ cup cocoa powder
⅓ cup maple syrup
2 tablespoons arrowroot starch
4 oz. dark or semisweet chocolate, chopped
¼ teaspoon salt
Optional: whipped cream, for topping
INSTRUCTIONS
In a small bowl, whisk the arrowroot starch with ½ cup of walnutmilk until the starch is dissolved and no chunks are visible.
Place the remaining 2 cups of walnutmilk in a medium pot and bring to a light simmer. Add the cocoa powder to the pot and mix until dissolved. Then mix in the maple syrup.
Pour the walnutmilk & arrowroot starch mixture into the pot and stir until combined. Let the mixture simmer for 2-3 minutes. Stir in the chopped chocolate and continue to simmer for 1 more minute.
Transfer the pudding to small serving cups or bowls. Let it chill in the fridge for at least 1 hour up to a day before serving.
