Berry Bread Pudding

INGREDIENTS

  • 5 cup stale bread, cut into bite-sized cubes (brioche and challah work best!)

  • 3 large eggs

  • 2 cups Vanilla Mariani Walnutmilk

  • ⅓ cup sugar

  • 2 tablespoons butter

  • ⅓ cup blueberries

  • ⅓ cup strawberries, diced

  • 1 tablespoon additional butter or vegetable oil, for greasing the pan

  1. Preheat the oven to 350 degrees and grease a large baking dish.

  2. Place the sugar, walnutmilk, and butter in a medium pot over medium heat. Stir for 3-5 minutes, until sugar and butter are melted. Remove from heat.

  3. In a large bowl, combine the walnutmilk mixture and eggs and whisk until combined.

  4. Place the bread pieces and berries in the baking dish and toss so that the berries are evenly distributed. Pour the walnutmilk and egg mixture over the bread.

  5. Bake for 40 minutes, or until the top of the bread pudding begins to brown.

  6. Remove from oven and serve warm, with whipped cream, ice cream, and/or fresh berries on top.
