Creamy Curry Ramen


INGREDIENTS

  • 1 teaspoon vegetable oil

  • 1 clove garlic, minced

  • 1 cup vegetable broth

  • 1 tablespoon red curry paste

  • 1 tablespoon miso paste

  • 1 packet instant ramen noodles

  • 1 cup Mariani Unsweetened Walnutmilk

  • Optional toppings: chili oil, sesame seeds, green onion, soft boiled eggs, tofu, steamed vegetables


INSTRUCTIONS

  1. Heat the oil in a saucepan over medium heat. Add the garlic and sauté for 2 minutes.

  2. Add the vegetable broth, curry paste, and miso paste and bring to a simmer. Stir over heat for 3-4 minutes, until the pastes dissolve into the broth.

  3. Add the ramen noodles and cook for 3 minutes, until soft.

  4. Remove from heat and stir in the walnutmilk.

  5. Add toppings of your choice!
