Sweet Potato Breakfast Bowl


INGREDIENTS

  •  1 large sweet potato or 2 small sweet potatoes

  • 1 tablespoon olive oil

  • ⅓ cup Mariani Original Walnutmilk

  • 2 tablespoons maple syrup or brown sugar

  • ½ teaspoon vanilla extract

  • ¼ teaspoon salt

  • Optional toppings: yogurt, granola, fresh berries, nut butter


INSTRUCTIONS

  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Brush the potato with olive oil and poke holes in its surface. Place the potato on the baking sheet and bake for 45 minutes to an hour, until it is soft and you can easily poke through it with a fork.

  2. Peel off and discard the potato skin. Place the potato in a bowl and add the walnutmilk, sweetener, vanilla, and salt. Mash all of the ingredients together until combined. Top with toppings of your choice.
