Dairy-free waffles with blueberry compote
INGREDIENTS
For the waffles
2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
¼ teaspoon salt
1 ¾ cups Mariani Original Walnutmilk
2 eggs
¼ cup vegetable oil
1 teaspoon vanilla extract
For the blueberry compote
1 cup frozen blueberries
2 tablespoons sugar
1 tablespoon lemon juice
INSTRUCTIONS
Preheat your waffle iron.
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the walnutmilk, eggs, and vegetable oil until combined. Pour the dry ingredients into the wet ingredients and stir until combined in a smooth batter.
Add about ⅓ cup of batter to the waffle iron and cook until golden brown (2-4 minutes). Repeat until you have used all of the batter.
Prepare the blueberry compote. Add the blueberries, sugar, and lemon juice to a saucepan over medium-low heat. Stir over heat for 10 minutes, then remove from heat and let cool for 5 minutes.
Top the waffles with blueberry compote, serve, and enjoy!
