Dairy-free waffles with blueberry compote


INGREDIENTS

For the waffles

  • 2 cups all-purpose flour

  • 2 tablespoons sugar

  • 4 teaspoons baking powder

  • ¼ teaspoon salt

  • 1 ¾ cups Mariani Original Walnutmilk

  • 2 eggs

  • ¼ cup vegetable oil

  • 1 teaspoon vanilla extract

For the blueberry compote

  • 1 cup frozen blueberries

  • 2 tablespoons sugar

  • 1 tablespoon lemon juice


INSTRUCTIONS

  1. Preheat your waffle iron.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.  In a separate bowl, whisk together the walnutmilk, eggs, and vegetable oil until combined.  Pour the dry ingredients into the wet ingredients and stir until combined in a smooth batter.

  3. Add about ⅓ cup of batter to the waffle iron and cook until golden brown (2-4 minutes).  Repeat until you have used all of the batter.

  4. Prepare the blueberry compote.  Add the blueberries, sugar, and lemon juice to a saucepan over medium-low heat.  Stir over heat for 10 minutes, then remove from heat and let cool for 5 minutes.

  5. Top the waffles with blueberry compote, serve, and enjoy!
