Creamy Vegan Broccoli Soup
INGREDIENTS
1 tablespoon olive oil
1 white onion, diced
2 stalks of celery, sliced
2 cloves garlic, minced
1 Yukon gold potato, diced
2 cups Mariani Unsweetened Walnutmilk
2 cups vegetable broth
1 head of broccoli, cut into florets
Salt and pepper, to taste
INSTRUCTIONS
Heat the olive oil in a large saucepan over medium heat.
Add the onions and celery to the saucepan. Sauté for 5-7 minutes, until the onions are translucent. Add the garlic and sauté for 2 more minutes.
Add the potatoes, walnutmilk and vegetable broth and bring to a simmer. Let simmer for 10 minutes. Add the broccoli and simmer for an additional 5 minutes.
Transfer the soup to a blender or food processor and blend until smooth. Taste and add salt and pepper as needed.
