Creamy Vegan Broccoli Soup


INGREDIENTS

  • 1 tablespoon olive oil

  • 1 white onion, diced

  • 2 stalks of celery, sliced

  • 2 cloves garlic, minced

  • 1 Yukon gold potato, diced

  • 2 cups Mariani Unsweetened Walnutmilk

  • 2 cups vegetable broth

  • 1 head of broccoli, cut into florets

  • Salt and pepper, to taste


INSTRUCTIONS

  1. Heat the olive oil in a large saucepan over medium heat.

  2. Add the onions and celery to the saucepan. Sauté for 5-7 minutes, until the onions are translucent. Add the garlic and sauté for 2 more minutes.

  3. Add the potatoes, walnutmilk and vegetable broth and bring to a simmer. Let simmer for 10 minutes. Add the broccoli and simmer for an additional 5 minutes.

  4. Transfer the soup to a blender or food processor and blend until smooth. Taste and add salt and pepper as needed.
