Vegan Lemon Bars


INGREDIENTS

For the Crust

  • ½ cup vegan butter, softened

  • ¼ cup powdered sugar

  • ¼ teaspoon salt

  • 1 cup all-purpose flour

For the Filling

  • 1 ¼ cup sugar

  • ⅓ cup cornstarch

  • 1 cup Mariani Original Walnutmilk

  • ½ cup lemon juice

  • 1 tablespoon lemon zest

  • ¼ teaspoon turmeric

  • Powdered sugar (for dusting)


INSTRUCTIONS

  1. Preheat the oven to 350 degrees and line a 8x8” baking dish with parchment paper.

  2. Make the crust. Using a stand mixer or hand mixer with beater attachments, mix the butter and sugar on medium speed until just combined. Add the flour and salt and mix until all of the ingredients come together in a soft, crumbly dough.

  3. Press the dough into the bottom of the baking dish and bake for 25 minutes.

  4. Add the sugar and cornstarch to a medium saucepan and stir to combine. Place the saucepan over medium heat and add the walnutmilk, lemon juice, lemon zest, and turmeric. Whisk the ingredients constantly over heat for 5-8 minutes, until it thickens to a pudding-like consistency.

  5. Pour the filling into the baking dish with the crust. Cover in place in the fridge to chill for at least 2 hours, up to 24 hours. Dust with powdered sugar before serving.
